Most “extra virgin” olive oil is already dead. The bottle on the supermarket shelf has spent months in shipping containers, warehouses and fluorescent light. Its polyphenols, the fragile compounds that make olive oil worth eating, fade with every week of heat and time. By the time it reaches your kitchen, most of what made it healthy is already gone. Olive oil, unlike wine, does not improve with age. It only forgets what it was.
In 1974 a line was drawn across Cyprus. The strip of no-man’s-land between the two sides, the UN Buffer Zone, was abandoned. No farming. No spraying. No chemicals. No people. Season after season, the soil was left to heal in silence. When they could plant again, they chose this forgotten ground, some of the last virgin soil in the Mediterranean, and gave it back to the olive tree.
